Ingredients
For the Cupcakes
1 2/3 cup Flour
1/2 tsp Baking Powder
1/4 tsp Baking Soda
1/2 tsp Salt
1 tsp Cinnamon
1/2 cup Unsalted Butter (melted)
3/4 cup Whole Milk
1/4 cup Sour Cream
2 tsp Vanilla Extract
2 Egg Whites
For the Frosting
4 oz Cream Cheese
1/2 cup Unsalted Butter (softened)
1/2 tsp Salt
2 cups Powdered Sugar
2 tsp Cinnamon
1 tsp Cinnamon Flavor Extract (optional)
Instructions
For the Cupcakes
Preheat your oven to 350°F.
In a medium bowl, whisk together the Flour, Baking Powder, Baking Soda, Salt, and Cinnamon. Set aside.
In a large bowl, whisk together the melted Butter, Milk, Sour Cream, Vanilla Extract, and Egg Whites.
Slowly pour the dry mixture into the wet mixture. Stir until smooth.
Grease your cupcake pan. Pour in 1/3 cup batter into each slot (or until it is 2/3 full).
Bake the cupcakes for 16 minutes, then check with a toothpick every 2 minutes until the toothpick comes out clean.
For the Frosting
Use a hand mixer to mix together softened Cream Cheese and Softened Butter until smooth (this is possible with just a spoon).
Mix in the Salt, Cinnamon, and Cinnamon Flavor Extract.
Slowly mix in the Powdered Sugar until you have your desired texture.
Let cupcakes cool before frosting.
