Ingredients
- 15 oz pumpkin puree
- 3/4 cup sugar
- 3/4 cup evaporated milk
- 1 tsp vanilla extract
- 2 eggs
- 2/3 cup flour
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 2 tsp pumpkin pie spice
- 1/4 tsp nutmeg
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat oven to 350℉
- Grease your cupcake pan
- In a medium bowl, stir together the flour, baking soda, baking powder,pumpkin pie spice, nutmeg, cinnamon, and salt
- In a large bowl, mix together the pumpkin puree, sugar, evaporated milk, vanilla extract, and eggs
- Slowly add the dry ingredients into the bowl with the wet ingredients and mix until smooth
- Pour the batter into the cupcake pan
⤷ About 1/3 cup, or until the tray is 3/4 of the way full
- Bake the cupcakes for 18 minutes, then check with a toothpick every 2 minutes until the toothpick comes out without residue
- Let the cupcakes cool before frosting
⤷ Keep in mind that the top of the cupcakes will flatten while cooling
